Almond Keto Fat Bombs

This is a classic energy ball recipe, similar to anything you'll find online. The main difference is that unlike other energy balls, these won't have honey or maple syrup or dried fruit since that will add too many carbs for a keto version. You can adapt this to have dried fruit and sweetener like maple syrup

Ingredients

  • 1.5 cups raw nuts choose your favorite or mix
  • 1 cup unsweetened shredded coconut use shredded to mix better
  • 1/4 cup raw cacao nibs a must for me to add low sugar chocolate punch
  • 1/3 cup nut or seed butter your choice
  • 1/2 cup coconut oil melted and cooled
  • 1 tsp pure vanilla extract
  • 1/2 tsp cinnamon powder use the real stuff, it's worth it
  • 3 tbsp cold water
  • 1/4 tsp salt
  • 2-3 tbsp collagen hydrolysate I like Great Lakes brand, mixes really well

Instructions

  1. Add the nuts to a food processor and pulse until finely chopped. Don't over process, you don't want a nut butter.

  2. Add the remaining ingredients to the food processor bowl and blend until a thick paste or "batter" has formed. The dough should definitely be sticky

  3. Roll the mixture into 24 balls; less if you want a bigger product. Store in a sealed container in the refrigerator. You can also freeze and use as needed. They thaw quickly, so you can store in the freezer to preserve the flavor and nutrition, and take out as needed
