Banana bread is a classic. Some love it with walnuts, others not so much. I LOVE walnuts or other nuts in my quick breads and muffins. They’re tasty, easy to add and by doing so, sneak in a lots of tree nut nutrition!

 

Banana Nut Bread

Ingredients

  • 1 cup / 250 ml white sugar
  • 1/2 cup / 125 ml melted butter or coconut oil for a really moist and flavourful change
  • 1 tsp / 5ml baking soda
  • 3/4 cup / 188 ml buttermilk or plain kefir
  • pinch of salt
  • 1 tsp / 5 ml of vanilla
  • 2 medium ripe bananas mashed
  • 3/4 cup / 188 ml chopped nuts like walnuts
  • 1.5 cups / 375 ml of flour

Instructions

  1. Preheat oven to 350F or 177C
  2. Mix in order given
  3. Use oil or non-stick spray to grease a loaf pan
  4. Bake for 1 hour or until a knife comes out clean when inserted
